In a medium bowl, toss the cooked chicken with ½ cup of BBQ sauce until evenly coated.
Remove the hot baking sheet from the oven and carefully place the flatbreads on it.
Spread a thin layer of BBQ sauce over each flatbread.
Sprinkle half of the mozzarella and cheddar cheese over the flatbreads.
Evenly distribute the BBQ chicken mixture on top.
Add the remaining cheese, followed by the sliced red onion and jalapeños (if using).
Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly, and the edges of the flatbread are golden and crispy.
Remove the flatbreads from the oven and let them cool for 2-3 minutes.
Drizzle with extra BBQ sauce and ranch dressing (if using).
Sprinkle with fresh cilantro, green onions, and a pinch of smoked paprika.
Slice and serve immediately.
