In a skillet over medium heat, cook 1-2 lbs ground beef until browned, breaking it up with a spoon (about 5-7 minutes). Drain excess fat if needed.
Transfer the browned beef to your crock pot.
Add diced onion, minced garlic, chopped bell pepper, diced tomatoes, beans, beef broth, and tomato paste.
Sprinkle in 1 tablespoon chili powder, 1 teaspoon cumin, 1 teaspoon smoked paprika, ½ teaspoon salt, and ½ teaspoon pepper. Stir everything together until well mixed.
Cover and cook on low for 6-8 hours or high for 3-4 hours.
Add 1 cup frozen corn (if using) in the last 30 minutes of cooking.
Give it a final stir, then ladle into bowls. Top with shredded cheddar and a sprinkle of cilantro or green onions if you like.In a skillet over medium heat, cook 1-2 lbs ground beef until browned, breaking it up with a spoon (about 5-7 minutes). Drain excess fat if needed.
