  • 1-2 lbs ground beef lean or regular, your choice
  • 1 medium onion diced
  • 3 garlic cloves minced
  • 1 bell pepper chopped (any color)
  • 1 can 15 oz diced tomatoes, undrained
  • 1 can 15 oz kidney beans or black beans, drained
  • 1 cup beef broth low-sodium works great
  • 2 tablespoons tomato paste
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup frozen corn optional
  • ½ cup shredded cheddar cheese for topping, optional
  • Fresh cilantro or green onions chopped (for garnish)

Instructions
 

  • In a skillet over medium heat, cook 1-2 lbs ground beef until browned, breaking it up with a spoon (about 5-7 minutes). Drain excess fat if needed.
  • Transfer the browned beef to your crock pot.
  • Add diced onion, minced garlic, chopped bell pepper, diced tomatoes, beans, beef broth, and tomato paste.
  • Sprinkle in 1 tablespoon chili powder, 1 teaspoon cumin, 1 teaspoon smoked paprika, ½ teaspoon salt, and ½ teaspoon pepper. Stir everything together until well mixed.
  • Cover and cook on low for 6-8 hours or high for 3-4 hours.
  • Add 1 cup frozen corn (if using) in the last 30 minutes of cooking.
